The pumpkin cream soup recipe is an extremely healthy and delicious dish. It is the specific food of this season, a dish with which you will surprise your family and friends. This recipe should be served with parsley, and if you like you can also add the egg with the cream, but it is not mandatory. Here are the ingredients you need, but also the method of preparation!
Cream of pumpkin soup – recipe
Ingredients:
-3-4 pumpkins of the right size
-2 onions
-2 carrots
-1 small celery
-1 parsley root
-2-3 tomatoes
-salt
-25 gr of butter
-1 bunch of parsley
-sour cream
-1 egg
Method of preparation:
All the vegetables are washed, peeled and boiled in a three-liter pot. The first time boil the carrots, celery, parsley with salt and onion, then let it boil for 30 minutes.
Peel the pumpkins, cut them into slices and boil them on top of the other vegetables. Let it boil for about 20 minutes, then drain it, add the onion and mash the other vegetables and peeled tomatoes with a fork or blender until you get the consistency of a paste. Put the butter, the juice in which the vegetables were cooked and the salt on top of the composition. you will get a delicious pumpkin cream. Cook over moderate heat for about 5-10 minutes. If you like, you can add the egg and cream, beaten well to make the soup even more creamy.
The pumpkin cream is ready! Serve hot with toasted bread or bruschetta and green parsley on top.
