Looking for a fasting recipe to prepare quickly? Try the vegetable soup, ideal to eat in spring. It is very tasty and, on top of that, it is also healthy.

Besides the vegetable soup, the vegetable soup is the most cooked and appreciated dish by Romanians. It’s easy to make, with vitamin-rich ingredients and full of flavor. Vegetable soup can be eaten by anyone, especially people who fast, who are vegan or who have digestive problems.

The soup can be served plain or with aromatic croutons. Those who do not fast or follow a plant-based diet can cook homemade noodles or soft semolina gnocchi.

How to make vegetable soup

For the vegetable soup you need few ingredients, namely: two carrots, a parsley root, a parsnip, a slice of celery, half a cup, a quarter of white or red cabbage, three or four broccoli florets, a pepper, a peeled tomato, a small onion, two or three tablespoons of broth, a bunch of chopped parsley and salt and pepper to taste.

First you need to finely chop the onion and sauté it in a little sunflower oil (do not use olive oil, because it can give a bitter taste to the soup). Then cut all the vegetables into cubes (carrots, parsley root, parsnip, celery, pepper, tomato) and slice the cabbage, as for a salad.

Take all the vegetables, except the tomato and broccoli, and add them to the pot, over the sautéed onions and leave them on low heat for another three or four minutes, until softened a little. Then add the tomato and broccoli and add water, salt and pepper to taste. Cover the pot with a lid and cook over low heat.

When all the vegetables are well cooked, add the broth and season with salt or pepper, if necessary. Finally, sprinkle the finely chopped parsley.
