Soups are well known among Romanians. They are appreciated and often served by people. More often than not, there is no meal without soup. For its preparation you will need 600 grams of lean minced meat. It can be chicken or a mix of chicken and pork. In addition, for the famous risottos you will need 6 tablespoons of rice, two eggs, a finely chopped onion and a bunch of fresh parsley.

Season the sausages with a teaspoon of sweet paprika, salt and pepper to taste. For the soup you will use a chopped onion, three carrots, a red or yellow pepper, a small celery, a parsley root, a sprig of parsnip, a tomato and 200 grams of cream with at least 20% fat. You will also need another 4 liters of chicken or beef broth. This can be replaced with water. The preparation of the recipe takes about an hour. From the ingredients mentioned you get 10 servings of soup.

How to make soup

You’ll start by dicing the carrots, peppers, parsnips, parsley root, onion, and celery. The vegetables will be placed in a pot on which the chicken soup or four liters of water will be poured and boiled. For a better taste, you can opt to saute the vegetables in two tablespoons of oil, then pour the soup over them. In another container, boil half a liter of water. When it boils, add three tablespoons of rice and then turn off the heat after two minutes. The water will be drained and the rice will be given a stream of cold water. To prepare the pancakes, put the meat in a bowl with the rice, two egg yolks, a chopped onion and the chopped parsley. Season the mixture with paprika, salt and pepper and mix well.

After all the ingredients have been homogenized, meatballs about three centimeters in diameter are formed. When you see that the water and the vegetables start to boil, add three tablespoons of pre-cooked rice and the parsley. Boil everything for 20 minutes, then add the peeled and diced tomato. Leave for another 2-3 minutes, then add the finely chopped dill, parsley and chives. The pot is covered with the lid and left for a few moments. Eventually, the food can be coated with cream. This last step is optional. In a bowl put the cream together with two egg yolks and two tablespoons of cold water. Mix well and dilute with a ladle of hot soup. After the composition in the bowl is heated, it is poured into the pot and can be served.
