Vegetables for the winter without boiling: Ingredients and method of preparation
For this vegetable recipe you need: one kilogram of carrot, one kilogram of pepper, one kilogram of onion, one kilogram of tomato, one kilogram of dill and parsley and one kilogram of non-iodized salt. From all these ingredients you will get five one liter jars of vegetables.
Keep in mind that vegetables and greens are weighed after cleaning.
The first step is to grate the carrot and then dice the peppers. Chop the dill and parsley as follows: the leaves with the knife and the larger stems with the blender. Next, dice the onions and dice the tomatoes. Blend the tomatoes with a blender or pass them through a meat grinder. Make sure you use a deep bowl.
Now add the salt to the tomato puree and mix. Put the carrot, pepper, onion, dill and parsley in a deep bowl and mix very well. Add the cherry tomatoes together with the salt and mix again.
The time has come when you need to transfer the vegetables into sterilized jars. Close them tightly with sterilized lids.

For this recipe you need four chicken legs or a chicken breast cut into pieces, two potatoes, salt and pepper to taste and, of course, freshly prepared vegetables.
