The recipe for Spicy Lentil Soup came to us from ancient Turkey. Although the Dacians prepared a lentil-based stew, and the Egyptians appreciated the dishes in which lentils were put, in recent years we have not been able to appreciate this vegetable at its true value.
Spicy lentil soup, ingredients for 4 people:

- 1 tablespoon of oil
- 1 onion, sliced
- 2 cloves of garlic, crushed
- 1 teaspoon of chopped red pepper or paprika
- 2 tsp cumin, ground
- 175 g of lentils
- 900 ml of chicken soup
- 2 tablespoons of tomato paste
- fried onion rings (optional)
Method of preparation:
Heat the oil in a saucepan. Add the onion and garlic, cover and cook for 5 minutes, until soft but not discolored. Add the chilli or paprika and cumin and fry for 1 minute, being careful not to burn. Add the lentils and chicken stock, bring to a boil and simmer for 30 min. Mix well, mashing the lentils, until you get a puree. Add the tomato paste and dilute with a little more broth if necessary. Season and garnish with fried onion rings. Serve hot with black grain bread.
