Rădăuţa soup was created 40 years ago by Cornelia Dumitrescu. The name of the dish derives from the city where the cook came from, Rădăuți, Suceava. The recipe was intended to replace beef bacon with turkey meat, in the famous bacon soup. Later, the dish also began to be cooked with chicken.
To cook a delicious dish you need 2 carrots, 2 egg yolks, 2 parsley roots, 5 garlic cloves, a bunch of green parsley, 250 milliliters of cream, a kilogram of chicken or turkey meat, 2 parsnip roots , a celery root and the white part of a leek. The food will be seasoned to taste with salt, pepper and vinegar. To cook it you will need a large pot because it will be cooked with 4 liters of water. The recipe is simple to prepare and does not take much time.
How to make Radăuța soup
First the vegetables will be cleaned and washed, then cut into suitable cubes, except the garlic. The meat will be boiled in a fairly large pot, over medium heat. As it boils, you will need to wipe off the foam on top with a spatula or skimmer. After boiling until it can be pierced, add the vegetables and season with salt. The ingredients will be left on the stove for 45-50 minutes, then drain from the soup. The meat will be boned and cut into small pieces, then it will be boiled again.
Meanwhile, in a bowl, mix the two egg yolks with the cream until a homogeneous composition is obtained. It will be poured over a ladle of hot soup and stirred again. It is recommended that the cream used contains at least 20% fat in order not to clot. The pot will be removed from the heat and left to cool for a few moments. Next, gradually pour the egg yolks and cream into the soup while continuing to mix until smooth. The garlic will be peeled, then crushed and placed on top of the soup. Finely chop the vegetables and add them to the pot. You can put the vegetables in the blender, then they can be put in the Radauța soup to give flavor to the food. In the original recipe they are added, but you can also serve the soup without it. At the end it will be served with some vinegar and a hot pepper. They can also opt for some croutons.
