Kitchen trick: how to have a clear chicken soup?
Romanians like to eat different meat or vegetable soups or stews depending on the area. However, most share a simple recipe for a clear soup which is usually chicken and contains homemade noodles or semolina dumplings. There is a big difference between clear and clear soup.
The first gives everyone a feeling of freshness and is much more appetizing, and many prefer it even in summer, cold. The turbidity of the water in the preparation occurs due to coagulated fats and proteins. It is recommended to boil the desired meat over low heat and remove impurities with a vacuum cleaner. If you do everything from scratch, you need time to let the pastry dry a bit. It is made with egg yolk, flour, salt and a little water and spread as thin as possible. If you choose to buy them, put them in water in the middle of the heat preparation so that they are completely cooked.

Method of preparation
Boil the desired meat (a whole chicken, wings or thighs). Leave everything on low heat for 30 minutes, during which time the water is skimmed from meat impurities and excessive fat. Cut the carrot into slices, the parsnip into cubes and the celery into similar pieces. Add the onion and the rest of the vegetables only after removing the meat.
You need to make sure the water is clear. You can drain it after cooking the meat. Boil the ingredients in the chicken broth and season with salt, then pour in the commercial or homemade noodles.
Let the meat cool and cut it into small pieces which you can then put back into the soup or you can reuse the pieces in another dish. Some people prefer it with a slightly sour flavor, so you can season it all with very little lemon juice. Serve with fresh parsley and lovage leaves.
