Transylvanian Chicken Soup Recipe. The secret ingredient that gives the best taste!
Ingredients:
-4 boneless upper chicken thighs
-1-2 tablespoons of oil
-2-3 carrots
-1 parsnip root
-1 parsley root
-1 medium piece of celery root
-200 – 300 g of vegetables of your choice: peas, green beans, cauliflower, broccoli, turnips, etc. – alone or mixed together
– celery leaves
– parsley leaves
-salt
-Pepper
-paprika (sweet paprika)
-1-2 onions
-150 ml of fermented cream with min. 20% fat
-1-2 tablespoons of lemon juice
Method of preparation:
We clean and wash the vegetables and greens. You can add vegetables to your liking: broccoli, cauliflower, turnips, peas, carrots, green beans or whatever you like. You can cut the vegetables into cubes or slices. I leave the celery, parsley, and parsnip roots whole or in larger pieces so that I can take them out of the soup at the end.
Finely chop the onion. I used red and white onions and chopped them with a special grater. Cut the meat into cubes. Heat a tablespoon of oil in the saucepan and quickly fry the meat on all sides.

Leave the onion like this until it becomes slightly glassy and then season with salt, pepper and paprika (sweet paprika). I added two tablespoons of grated paprika because it goes perfectly with this soup. Stir continuously for a few minutes, being careful not to burn the pepper because it will lose its wonderful color and become bitter. After the water has gone down, add the vegetables that don’t need much boiling. If you want to add broccoli or cauliflower that boils quickly, add them last. If not, porridge will be prepared.
The soup is ready when the vegetables are cooked. In the end, you can “fish” from celery, parsley, parsnip soup – if you don’t like them.
Add the lemon zest and cream to taste.
